It’s winter time and that means one thing: baking. However, most baking is done with calorically dense unhealthy foods. I can’t lie, they taste amazing, but when you wake up January 1st with a new patch of fat that you never noticed before, it won’t taste too amazing.

I have a huge sweet tooth. I also love peanut butter. Why deprive myself when I can have both of these and still pack on lean muscle mass, burn body fat, and still feel super healthy? How do you do that? WHEY PROTEIN!

 

Why bake with whey protein?

1.  Peanut Butter S’mores Blondie

Ingredients:

  • 1 can (400g) white beans, drained and rinsed
  • 2 scoops SFH whey
  • 1/3 cup (96g) organic peanut butter
  • 1/3 cup pancake syrup
  • 2 egg whites
  • 2 tsp vanilla extract
  • ¼ tsp baking powder
  • 1 packet stevia
  • 1 Quest Nutrition S’mores Bar

 

Method:

  1. Blend all ingredients except quest bar
  2. Fold in ½ of the quest bar
  3. Pour into a greased baking pan
  4. Pour batter into pan and top with remaining half of quest bar
  5. Bake at 340 degrees for 15-20 minutes. Don’t overbake! They should turn out gooey.

 

2.  Chocolate Chip Cookie Dough Swirl Cheesecake

Ingredients:

  • 24 oz fat free cream cheese
  • 20 oz fat free greek yogurt
  • 4 whole eggs
  • 1.5 cups stevia
  • 0.5 cup unsweetened almond milk
  • 85g (3 scoops) SFH vanilla protein powder
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 2 Quest Nutrition chocolate chip cookie dough bars
  • ¼ cup unsweetened almond milk

Method:

  1. Preheat oven to 325 and prepare spring form pan with non-stick cooking spray
  2. Mix the fat free cream cheese and stevia together until smooth
  3. Add in the eggs one at a time and mix after each one
  4. Add in the rest of ingredients except for the quest bars and ¼ cup milk
  5. Microwave quest bars and milk for a little less than a minute and then mix to melt it to a smooth consistency
  6. Put the rest of the cheesecake batter into the prepared spring-form pan and flatten with spoon
  7. Add dollops of the chocolate chip cookie dough batter and make swirls into the cheesecake
  8. Bake in the oven for 30 minutes then reduce to heat of the oven to 200 degrees
  9. Bake in the oven for an additional hour
  10. Remove and let cool completely on the stove top
  11. Let it cool in the fridge overnight or at a minimum of four hours

 

3.  Peanut Butter and Cookie Dough Banana Boat

Ingredients:

 

  • 1 large semi ripe banana
  • 1 Quest Nutrition cookie dough bar
  • 1 tbsp natural peanut butter
  • 1 tbsp dark chocolate chips
  • 1 tbsp natural peanut butter chips

 

Method:

 

  1. Preheat oven to 350
  2. Cut a large banana down the middle and place in a bread pan
  3. Cut a Quest cookie dough bar in half
  4. Spread the peanut butter in the middle of the banana and then stuff with the two pieces of Quest Bar
  5. Top with dark chocolate and natural peanut butter chips
  6. Bake for 5-7 minutes

 

4.  Cookie Dough Core Pancakes

Ingredients:

 

  • ¾ cup quick cooking oats1/2 cup egg whites
  • 1 egg
  • 1 mashed banana
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 Quest Nutrition cookie dough protein bar

Method:

 

  1. Mix all pancake ingredients together in a large bowl.
  2. Pour palm size dollops of batter into a pan over medium heat and cook with coconut oil or non stick cooking spray for 3-5 minutes. Place piece of cookie dough into center of pancake batter and then flip pancake.
  3. Top pancake with some more cookie dough quest bar or chocolate chips.

 

5.  Gingerbread Protein Pancakes

  • 1/4 cup oat flour
  • 1 scoop SFH vanilla whey protein powder
  • 1/2 tsp baking powder
  • 1/2 tsp ginger
  • 2 tsp cinnamon
  • 1 TBS Biscoff cookie butter
  • 1 large mashed banana
  • 1/2 tsp vanilla extract
  • 1 tbsp organic mollasses 
  • 1/2 cup unsweetened almond milk

 

Method:

 

  1. Mix all pancake ingredients together in a large bowl.
  2. Pour palm size dollops of batter into a pan over medium heat and cook with coconut oil or non stick cooking spray for 3-5 minutes.  Should make about 5-6 medium pancakes.
  3. Top pancakes with grass fed butter.

 

6.  Walnut Crust Crumble

Ingredients:

  • 1 tbsp crushed walnuts
  • 1 tbsp coconut oil
  • 2 tbsp oat flour
  • 3 tbsp water
  • 1 packet stevia or 1 TBS
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon

 

Method:

 

  1. Mix all pancake ingredients together in a large bowl.
  2. Pour palm size dollops of batter into a pan over medium heat and cook with coconut oil for 3-5 minutes on each side or until golden brown.
  3. Layer pancakes with another sliced banana if it fits your macros then layer with banana cream. Top pancakes with Walnut Crust Crumble and an optional dollop of no sugar added whipped cream. Sprinkle with cinnamon.

 

 

7.  Whey [Bro]tein Bar Patch

Ingredients:

 

  • 1/2 cup whey protein powder
  • 1/2 cup slivered almonds
  • 1/2 cup pecans
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup almond butter
  • 1/4 cup coconut oil
  • 1/4 cup almond meal
  • 1.5 tsp pure vanilla extract
  • 1/2 tsp raw honey
  • 1 large egg
  • 1/2 tsp sea salt
  • 1/2 cup dried cranberries or blueberries

 

Method:

 

  1. On a cookie sheet, toast nuts and shredded coconut oil until golden brown
  2. Pour mixture into a food processor and pulse until nuts are chopped and mixture becomes ground
  3. Melt coconut oil and almond butter in a mixing bowl and stir until smooth
  4. Add in vanilla extract, honey and sea salt
  5. Fold in nut mixture, almond meal and protein powder until mixed thoroughly
  6. Add whole egg and mix thoroughly
  7. Fold in blueberries and cranberries
  8. Press mixture into 8×8 pan
  9. Cook in oven at 325 degrees for 10 minutes
  10. Remove from oven and let cool
